These cute loaves will delight kids of all ages. They can be made into muffins if you don’t have a mini loaf pan (although this kind of pan is a great addition to any kitchen!). These loaves also freeze well, so make a batch, freeze half and you’re good to go! Makes about 16 mini loaves

You will need:

500 ml cake flour 25 ml baking powder 5 ml salt A few twists of black pepper 500 ml mature cheddar 60 ml chives, finely chopped 2 eggs 500 ml milk paprika YOU MIGHT ALSO LIKE TO TRY: Vetkoek with biltong & feta

How to make the mini cheese & chives loaves

  1. Preheat the oven to 200 °C and prepare a mini loaf tin by spraying with non-stick spray and lining the bottoms with some baking paper.
  2. Sift the flour, baking powder and salt. Add the black pepper, chives and cheese and mix well.
  3. Whisk together the eggs and milk and add to the dry ingredients to create a fairly runny batter.
  4. Spoon into the prepared tin, sprinkle a little bit of paprika over every loaf and bake about 15 minutes until puffed up and golden brown. These loaves can be served with butter and extra cheese, or pack as is into lunchboxes.
