With only a few ingredients and a freezer, you’ll have a batch of this watermelon gin popsicles recipe ready to wow your guests (or keep all to yourself).

Removing the seeds from the watermelon for these popsicles can be quite fidgety, but it’s well worth the effort. These can be made ahead of time and frozen until you need them. Serve them up as a surprise in the late afternoon at your next summer party!

Makes 8

You will need:

1 cup water

How to make the gin popsicles

1 Combine the water and sugar in a small saucepan and simmer until the sugar has melted. Remove from the heat and set aside to cool.

2 Roughly chop the watermelon and remove all the seeds. The ready-to-use watermelon chunks should weigh about 500g. Blend the chunks and lemon juice in a food processor until puréed.

3 Press the mixture through a sieve to remove any seeds you might have missed. Combine with the sugar syrup and then add the gin, stirring well to combine.

4 Pour this mixture into individual popsicle moulds and freeze for at least six hours. Alcohol always takes longer to freeze so leaving the mixture overnight is best.

Frequently Asked Questions (FAQs) – Watermelon Gin Popsicles Recipe

Can I make these popsicles without gin?

Yes, simply leave out the gin for a non-alcoholic version. The result will still be refreshing, fruity, and ideal for summer – perfect for everyone to enjoy.

Why does the alcohol make the popsicles take longer to freeze?

Alcohol has a lower freezing point than water, so it takes much longer to solidify. That’s why it’s best to freeze these overnight for the firmest texture.

What’s the best type of gin to use for this recipe?

A classic London dry gin works well, but you can experiment with a flavoured or botanical gin for an extra twist, such as cucumber or berry-infused gins.

Can I use a different fruit instead of watermelon?

Absolutely. This recipe can be adapted with strawberries, mango, pineapple or mixed berries. Just ensure the fruit is well blended and sieved for a smooth consistency.

Do I need to remove every single watermelon seed?

It’s highly recommended. Seeds affect the texture and can be unpleasant in a popsicle. If your watermelon is not seedless, take the time to remove them carefully or sieve the purée thoroughly.

How far in advance can I make these?

You can make them up to a week in advance, stored in the freezer. Keep them in the moulds or transfer to an airtight container or freezer bag once frozen.

Can children eat these if the alcohol is frozen?

No. Even though the alcohol is partially frozen, it does not evaporate, and these are strictly for adults. Always label clearly and store out of reach of children.

Can I adjust the sweetness?

Yes. Feel free to reduce the sugar or add a little more lemon juice if you prefer a tangier, less sweet flavour. Taste the mixture before freezing and adjust accordingly.

What can I use if I don’t have popsicle moulds?

You can use small plastic cups, silicone muffin trays, or ice cube trays. Just insert a wooden stick once the mixture has started to firm up slightly during freezing.

How should I serve these at a party?

Serve them on a tray filled with crushed ice to keep them from melting too quickly. You can also present them with fresh mint, lime slices, or a small splash of tonic water on the side for an extra treat.
