Ingredients:
- 1 head cauliflower
- 4 cloves garlic
- 100g sourdough bread
- 50g blanched almonds
- 1 x 460g jar of roasted red peppers
Method:
- Preheat oven to 180 degrees
- Trim outer leaves and stalk of cauliflower
- Halve and slice into 3cm wedges
- Roast with olive oil, red wine vinegar, sea salt and pepper for about 35 mins until golden Meanwhile, peel the garlic and tear the bread into small chunks and roast on a tray with the almonds
- Put into oven when cauli has 15 mins to go
- Remove trays from oven
- Reserve a handful of almonds and blend the rest with the garlic and bread.
- Add the peppers, 2 tbs olive oil , a swig of red wine vinegar and blend until smooth
- Loosen with a splash of water if needed
- Taste and season
- Pour blend onto a plate, place cauli on top and chop remaining almonds and sprinkle over
