Baby Yum Yum - rice krispies easter egg smash cake

Quick, easy and loads of fun for the little ones, this smash cake will be a big hit for birthday parties, or any occasion, really.

SERVES 4-6 PREP 20 MINS + CHILLING
COOK 5 MINS

You will need:

150g dark chocolate, chopped

75g butter, chopped

1 tbsp golden syrup

2 1/2 cups Rice Krispies

¼ cup desiccated coconut

Easter eggs, sweets or chocolates, to fill

200g milk chocolate, melted

1/2 tbsp hundreds and thousands

How to make the Rice Krispies smash cake

1 Lightly grease a 16cm-wide round bowl (around 1,25L). Line with plastic wrap.

2 In a large saucepan, stir chocolate, butter and syrup together on low heat until melted.

3 In a large bowl, combine Rice Krispies and coconut. Pour over chocolate mixture, stirring.

4 Press mixture into base and sides of a medium bowl, ensuring edges are level (flatten out with a palette knife). Chill 1 hour to set.

5 Using plastic wrap to lift, remove shell from bowl, fill with chocolates and top with a serving plate. Invert.

6 Pour melted milk chocolate over top, drizzling down sides of cake. Sprinkle with hundreds and thousands and chill until set
