Rice Krispie treat Cookie Monsters recipe

Rice Krispie treats are foolproof crowd-pleasers at kids parties (although we’re convinced the grown ups love them just as much), and they’re so versatile: you can adapt them to suit any party theme or colour.

Makes 12

You will need:

¼ cup butter

4 cups mini marshmallows

5 cups Rice Krispies cereal

Blue food colouring

White fondant icing

Black food colouring

How to make the Rice Krispie Cookie Monsters

1 Place the butter and marshmallows in a heat-proof bowl and microwave on high for about 2 min, or until the butter and marshmallows have melted.

2 Give it a quick stir to smooth out the consistency, immediately add the Rice Krispies and stir until well-coated. Add as much food colouring as you need to achieve the desired colour. Set this aside to cool before making your shapes.

3 In the meantime, make cookie monster eyes or other accessories by rolling and moulding fondant icing. You won’t easily find such a small cookie cutter, so use another small round object to cut out the fondant. I use the back of a piping nozzle, which is handy because, if the icing gets stuck, you can use a toothpick to dislodge it through the opening.

4 Set your shapes on a piece of baking paper and complete the eyes by painting a little round black pupil on to the shapes with black food colouring. These are best done when they’ve had some time to dry. If the Rice Krispie cookie is still sticky when you attach them, they should stay on. If not, make a paste with a little icing sugar and water and use it like glue. These little eyes will bring your cookie monsters to life!
