There’s always a tin of tuna in the back of the grocery cupboard, and you can keep a pack of the mini pitas in the freezer. Then it’s a matter of minutes to whip up these tasty morsels. Serve with homemade (or store bought, we’re not judging!) tzatziki.
Makes 6 pitas (3 per lunchbox)
You will need:
6 mini pita breads
1 tin tuna, drained
60 ml mayonnaise
60 ml full cream yoghurt
Salt and black pepper, to taste
A squeeze of lemon juice
1 large carrot, grated
A handful of butter lettuce
For the homemade tzatziki
2 tbs full cream yoghurt
1 tbs chopped cucumber
½ tsp chives, chopped
A squeeze of lemon juice
Salt and pepper, to taste

How to make the mini tuna pitas
- Mix the mayonnaise and yoghurt and add to the drained tuna. Add salt and pepper to taste and mix well.
- Place the mini pitas in the microwave for about 10 seconds. Slice open carefully – not all the way, just to make a pocket. Spoon in about two teaspoons of the tuna mixture, add some grated carrot and lettuce.
- To make the tzatziki: Mix all the ingredients together and spoon into a small container, ready to pack into the lunchbox.
