How to make the easy microwave fudge

1 Put the condensed milk, butter and sugar in a microwave-safe bowl – remember that the mixture is likely to bubble up towards the end of the cooking time, so use a bigger bowl than you think you need.

2 Microwave on high for 2 minutes. Remove from the microwave and stir mixture well.

3 Place back in the microwave for a further 10-12 minutes (microwaves vary so adjust according to the strength of yours), stirring the mixture every 2/3 minutes or so until it’s a golden colour. Don’t overcook, and be careful because the fudge (and the bowl!) will be HOT when you take it out the microwave!

4 Remove from the microwave and quickly add your vinegar and any ‘extra’ ingredients – like Oreos or marshmallows – to the mixture and stir.

What size bowl should I use?

Use a large microwave-safe bowl—larger than you think you’ll need—as the mixture bubbles up significantly during cooking and could overflow if the bowl is too small.

How do I know when the fudge is ready?

The fudge should turn a golden colour and start to thicken. Stir it every 2–3 minutes and keep a close eye in the last few minutes. Every microwave is different, so adjust cooking time as needed.

Why do I need to stir so often?

Frequent stirring ensures the mixture heats evenly and prevents burning or separating. It also helps you monitor the texture and colour as it cooks.

Is the vinegar necessary?

Yes, the small amount of white vinegar helps the fudge set with a smooth texture. It doesn’t affect the taste, but you can omit it if you prefer a slightly softer finish.

What flavour variations can I try?

You can customise your fudge with vanilla essence, crushed biscuits (like Oreos), chocolate chips, chopped nuts, marshmallows, cherries, or nougat—just add them at the end before setting.

Can I make this fudge without condensed milk?

No, condensed milk is essential for this specific recipe’s sweetness and texture. Using evaporated milk or fresh cream won’t give the same result.

How long does the fudge need to set?

Place the fudge in the fridge for at least 2 hours, or until firm. For best results, leave it overnight before cutting into squares.

How should I store the finished fudge?

Keep it in an airtight container in the fridge for up to a week. For longer storage, you can freeze it in batches—just thaw in the fridge before serving.

Can children help make this recipe?

They can help with adding ingredients and stirring (with supervision), but be very careful—both the bowl and mixture get extremely hot, so an adult should handle the microwave steps.

Can I double the recipe?

Yes, but be cautious. Use an extra-large bowl, and you may need to slightly increase the cooking time. Stir more frequently to avoid overheating or burning.

What if my fudge turns out too soft or too hard?

Undercooked fudge may stay soft and sticky, while overcooked fudge can become crumbly. Adjust the timing for your microwave’s power and remember to test the texture as you go.
