Naturally high in fibre and incredibly tasty, this apple, carrot & bran muffin recipe mixture can be kept in the refrigerator for up to 30 days before baking. Plus, the baked muffins freeze and defrost well. These muffins are a healthy option for the kids’ lunchboxes – and yours!
You will need:
2 eggs
1 cup soft brown sugar
60mls canola oil
1 cup oat bran
1 ½ cups flour
2 cups digestive bran powder
½ tsp salt
1 Tbs bicarbonate of soda
1 large grated apple
2 grated carrots
½ cup sultanas/raisins
1 tsp ground cinnamon
2 cups low-fat/fat free milk
1 tsp vanilla essence

How to make the apple, carrot & bran muffins
1 Beat the eggs, sugar & oil together
2 In another bowl add all the dry ingredients, the grated apple, grated carrot and the sultanas. Mix thoroughly.
3 Combine the milk and vanilla and add to the flour mixture. Stir until well blended. Do not overmix.
4 Leave to stand for 2-3 hours or overnight in the refrigerator.
5 Pre-heat oven to 180°C.
6 Fill muffin pan 2/3 full and bake for around 15 minutes until cooked.
