- Add the mushrooms and vine tomatoes. Toss to coat and allow to marinade in the fridge for 1 hour.
- Braai the mushroom and vine tomatoes until cooked through and they both just begin to have their skins wrinkle. Remove from heat and set aside to cool slightly. Slice the mushrooms into 1 cm wide slices.
- Slice the fresh tomatoes into bite sized pieces and tear the mozzarella into small pieces.
- On a large platter combine the tomatoes (both fresh and braaied), mushrooms, mozzarella and basil.

- In a small bowl, whisk together the oil and lemon juice until combined.
- In a medium bowl, add the mushrooms, herbs, lemon zest, oil mixture, salt and pepper. Toss to combine.

- 1 1/2 poundvariety of mushrooms
- 2garlic cloves, chopped finely
- 1 splashextra virgin olive oil

Directions
- Preheat the oven to 425° F. Wash, throughly dry, and roughly chop the mushrooms. Place in a large bowl and add the chopped garlic, a good splash of olive oil, and salt and pepper to taste.
- Mix well and place on a lightly greased baking sheet. Roast in the oven until golden brown and cooked through, about 45 minutes.

Ingredients
- 400 g wild brown rice
- 3 T olive oil
- 4 large brown mushrooms
- 100 g organic almonds, ovenroasted
- 250 g dried apricots
- dried figs and raisins, chopped
- 2 T chopped parsley
- 2 spring onions, chopped
Method
- Pour the rice into a saucepan and submerge in water.
- Simmer for 20 minutes, or until the rice is soft. Drain.
- Heat 1 T of the oil in a frying pan, add the mushrooms and fry until cooked through. Set aside.
- Saute the almonds, apricots, and figs and dates in the remaining oil.
- Add the cooked rice, chopped parsley, spring onion and pomegranate rubies to the pan and warm through.
- Place a cooked mushroom on each plate and top each with spoonfuls of the warm rice salad.

- 3 Tbsp olive oil

- 1 Tbsp each chopped fresh mint, basil and parsley
- Salt and freshly ground black pepper, to taste
What to do
- Prepare the dressing by whisking all the ingredients together. Taste and check for seasoning, and then set aside until serving.
- Cook the barley according to the packet instructions. Drain and set aside.
- To a large heavy-based pan over medium-high heat, add the remaining 1 Tbsp olive oil and the butter. When the butter starts to foam, add the mushrooms and fry for 2–3 minutes, then add the garlic and cook for another minute. Add the barley and allow to toast gently in the pan, then add in the 2 Tbsp of olive oil and the honey. Add the balsamic vinegar and simmer gently for a further minute or two before adding the spinach leaves. Remove the pan from the heat, and stir gently until the spinach leaves have wilted. Add everything to a suitable serving platter or bowl.
- Crumble over the feta, as well as a sprinkling of salt and pepper. Serve with the dressing on the side.
