Lucia Mthiyane shares her crowd-pleasing roast beef fillet recipe from her cookbook Kitchen Queen.
Serves 4–6
You will need:
1.5 kg beef fillet
30 ml olive oil
15 ml coarse sea salt
10 ml freshly ground
black pepper
8 sprigs of rosemary
8 sprigs of thyme
12 cloves of garlic, sliced
How to make the beef fillet
1 Heat a medium skillet or large pan.
2 Preheat the oven to 180 °C.
3 If preferred, butterfly the fillet (otherwise keep it whole).
4 Rub the meat with the oil, salt and pepper.
5 Brown the meat for 5 minutes on each side in the piping hot pan.
6 Cover the pan with foil.
7 Reduce the oven temperature to 160 °C and roast the meat for 1½ hours.
8 Once cooked, remove the foil and sprinkle the rosemary, thyme and garlic over the steak.
9 Again cover with foil and let it rest for 15 to 20 minutes, depending on how you like your meat done, before serving.
